The bitterly cold weather provided another day free of school and work for everyone so I decided to make my own version of Egg McMuffins. I used a large, round, metal biscuit/cookie cutter on well-heated cast iron pan to keep the eggs round. I spray it with cooking oil spray to keep the egg from sticking. Remove the cutter when egg is firm enough to flip then flip and add cheese of your choice. I used pepper jack. Toast and butter some english muffins, top it with the egg and cheese and you’re good to go! Some of us sliced the sausages down the middle and added them on top of the egg. Regular bacon or canadian bacon would be good too! Make with all your favorites and enjoy! It was a good way to start the day and warm up our insides.
