Baking was the name of the game this weekend. I made cinnamon rolls for the kids and mini cheesecake snacks for a Christmas party at church. The recipe for the cinnamon rolls is from a mystery book that I read I long time ago about a caterer who solves crimes. They are called Monster Cinnamon Rolls and take a very long time to make. I started at 6:30 Saturday morning and didn’t finish until around noon. There was an hour lag time because I had to go buy yeast at the store and it didn’t open until 8, but that was it. The dough has to rise for an hour twice before the rolls can be cooked, but my kids say that it’s worth all the effort. Too bad they aren’t the ones putting forth the effort! They are delicious though! I made them smaller this time because the “Monster” size is just to big to eat all at once. Usually, only 6 fit in a 13×9 baking dish. I had some extra dough that had cinnamon and brown sugar mixed in it so I twisted it up and made cinnamon bread sticks. I had to leave for a birthday party right after that so I didn’t have time to make the cheesecakes for Sunday.
Sunday morning, bright and early, I made cheesecake batter and churned out 48 mini cheesecakes. It was an easy process, but the cooking time had me cutting it a little close. I only have one mini muffin pan so I had to cook twice. They were a big hit at church and I had to make more when I got home because Hubby really wanted some. Luckily the recipe was for a whole cheesecake and I had a lot of batter left over. I ended up making 72 more little cheesecakes, or maybe it was 96, I can’t remember. They were eaten as soon as they came out of the freezer so not many are left. Since everyone wanted them right away and I didn’t have 4 hours to refrigerate them, I just stuck them in the freezer for half an hour. It worked great!
I’m not a big fan of cheesecake because it’s so rich, but these bite-size morsels are just right.
